Soft Serve

With this, perhaps the last, heat wave of the summer, we all need some help savoring it before winter comes around again.

There are many summer foods and meals and essentials out there, but little say summer and allow you to really take on the heat like soft serve. And better yet this one has one ingredient and one major step to creation and is truly guilt-free!

Banana Soft Serve Ice Cream


  • 3 bananas
  • dash of vanilla (optional–try it plain first)


  • dice bananas
  • place in a Tupperware and in a freezer over night
  • 15 minutes before you are ready to serve, place bananas in a blender and turn it on
  • after a couple seconds it will stop moving and you will have to use a fork to mix it around before blending again. this will happen a few times, but once enough becomes soft, it will blend a bit better
  • continue blending and stirring until smooth as soft serve and no banana chunks remain
  • spoon into bowls with any topping you like (i did peanuts, but other ideas are listed below)
  • makes about 2 cups (about two servings)
  • consume immediately


Toppings (totally optional, this is really yummy plain, but if you want to spiff it up, these are some great ideas)

  • chocolate chips
  • sweetened coconut flakes
  • crushed peanuts or almonds
  • crushed pretzels
  • honey
  • any sort of berries or other fruit

If you’re feeling more ambitious, you could try any number of the following (each should be enough to top 2 servings):

  • almond butter crumble (1 T each almond butter and almonds mixed in a blender until almonds are desired size)
  • brownie sundae (soft serve over a warm brownie with a hot fudge topping)
  • berry ganache (blend 1/4 cup room temperature berries and 1 T honey or maple syrup in a food processor. if you have a screen to press it through, you can use that to remove the seeds.)
  • date syrup (blend 5 pitted medjool dates in a food processor)
